Three years ago, we started St. Bruno Bread Co. with one simple mission:
Make better bread.
From the beginning, weāve strived to produce the highest quality, cleanest-ingredient breads and doughs for Baton Rouge and beyond. As we grew, we discovered that Louisiana still had an outdated law restricting the use of unenriched flour for commercial bakeries, a regulation that limited consumer choice and placed Louisiana bakeries at a competitive disadvantage. (Meaning, by law bakeries were required to use flour enriched with Iron, Thiamine, Riboflavin, Niacin, Folic Acid for commercial use.)

We met with legislators and we testified before the Louisiana House of Representatives. We shared our perspective as Louisiana bakers and advocated for a common-sense change that would modernize our stateās bread laws.
Today, weāre proud to celebrate and announce the passage of HB 1100 that officially becomes law on August 1, 2026
This law removes restriction on the use of unenriched flour in commercial bread and dough manufacturing, bringing Louisiana in line with much of the rest of the country⦠most importantly giving bakers greater flexibility and giving consumers more choice.
This isnāt just a win for St. Bruno Bread Co⦠Itās a win for every Louisiana bakery. Every food entrepreneur. Every consumer who believes quality and innovation should be encouraged, not limited by outdated regulations.
