Our Story...
In 2014, when Jaelin was a newly minted freshman in high school, her mom, Joan, had a chance encounter with the owner of a new cafe in Bangor. As they were talking about the "fancy sandwiches" on the menu, Joan mentioned that her daughter loved fancy sandwiches and that she is the type of kid who likes fancy cookies and makes French macarons for fun. When the owner heard that Jaelin
made French macarons, he blurted out that he would sell Jaelin's macarons! When he learned that she was just 14 years old, he was not deterred and said that he would sell them anyway. Since Jaelin had just made macarons that weekend, Joan went home and brought some macarons back for him and his partner to try. His response was, "These are as good, if not better, than the ones we buy from New York." It didn't take long for Simply Macarons by Jaelin to take off. Their home kitchen received official certification and each flavor of macaron was officially tested for shelf stability by the Cooperative Extension's Food Safety Department at the University of Maine. Jaelin began baking French macarons professionally at age 14. During high school she baked for large and small events. Her very first large event was for the Family Business Awards Dinner in Portland, hosted by Machias Savings Bank. They ordered 800 macarons!! Back then each batch produced 20 macarons, so there were lots of late nights where we were producing macarons at midnight!! Since then Jaelin has filled orders for up to 2000 macarons! All these years later, Jaelin has established herself as a premier baker of French macarons in Maine, with upwards of 40 flavor varieties. Every single one of Jaelin's macarons is hand-made in small batches with cage-free eggs and high quality ingredients. Most of Jaelin's macarons are gluten-free (not certified gf) as they are made with almond flour. They also contain dairy; however she can make them dairy-free via a custom order. All macarons contain almond flour, eggs, sugar, dairy, flavoring, and coloring. Weddings, Showers, Open Houses, Holiday Parties, Birthday Parties and yes, even Royal Wedding Watch Parties are some of the events where Jaelin's macarons have been featured. She loves to color match her macarons to your event, whether big or small. Jaelin is now a nursing student in Boston. She has handed the reins of Simply Macarons by Jaelin to her mom, Joan Roberts, who has passionately embraced her new career. Joan is enthusiastic and loves the creativity involved in baking these colorful and uniquely delicious delicate French cookies. Each week Simply Macarons by Jaelin offers anywhere from 12-20+ flavors of French macarons, and a variation of mini macarons.
