The carrot cake is the epitome of “labor of love.” It requires fierce upper body strength, endurance, proper hydration, adequate breaks, and a box and a half of band aids (just kidding. A box shredder only got me once when I was a teenager making key lime pie...but that’s another story.) I am quite certain that whomever coined the term “Blood, sweat and tears” was in fact making a carrot cake!
The effort though is so worth it. This is one of my best cakes (just ask my super picky husband.) Every baker has a “best,” something they excel at. Mine are my Aunt Pat’s chocolate cake, red velvet and carrot cake. I pride myself on making REAL cakes, with real ingredients. But mostly, I am just a people pleaser. I love people and love making them happy....which has led me to finding my real passion in life. Nursing.
I have had many friends tell me I can make a career selling my cakes. While that is probably the biggest compliment I could ever receive, that was never the plan. I never expected this to become as big as it has, and I am eternally grateful to everyone who has supported me along the way. I have enjoyed every cake and every challenge. But it is time for me to take a step back from my hobby for my real dream job. As nursing school is becoming more challenging, I need to make it a priority, so Fat Kid Confections is going to go on a hiatus. I am not going to go as far as saying this is closed for good, but for now I need to cut back. I may take an order here and there, and any orders that have already been placed is still a GO! But I will not be taking regular weekly orders going forward.
Thank you to everyone who had faith in me this past year and a half. It has been so much fun!
Now, if anyone needs me, I will be over here shredding carrots for DAYYYSSSSS!! 🤣
