Bakers Pride 352 Deck Ovens. I retrofitted these pizza ovens with steam injection and internal metal chambers to trap the moisture for bread. I used this baby for all of the Miche subscription and farmers market bakes 2014-2019 (check my feed for examples). Two decks together hold 4 full size sheet pans; 24 x 1kg boules; 20 full length (22") baguettes. Each deck is around 44"W x 33"D x 7"H. Gas or propane. Includes double walled vent duct system. Built in 1982, and oldie but a goodie. No electronics to worry about, easy to find spare parts, more capacity and cheaper than them Rofcos/Rackmasters/Simply ovens. If you buy the oven, I'll throw in a one day bread making session (or some other bakery consulting) if you want. Make me an offer, I need this thing gone!!

Hansen Hippo No1 Hammermill. This thing is a beast and will pulverize anything! Was used for mesquite pods, cocoa, and corn. Currently decommissioned and stored . Comes with various sizes screens to control fineness. Make me an offer!!

Haussler SP-20KA spiral mixer. This dough mixer is an absolute workhorse. Made in Germany, so much better construction than the Chinese imports. I used to mix six back-to-back 24kg dough batches no problem. Single speed and it runs off a normal household 120V outlet. Bowl comes off for easy cleaning! Comes with a dust cover for when not in use. Need to sell this ASAP, so make me an offer!!

Where do you get your baguettes?

These Singlecuts are created using a 50+ hour process and fermented with both b**a (yeast) and levain (sourdough). And some locally stone-milled whole grain flours, of course.

Made and sold only at the Austin Lamar . Look for the paper bags with the window so you know you've got the right stuff ;)

Really digging this Sperlonga bread, part of the new scratch bread program we've been working on for the Lamar flagship Whole Foods store (what an amazing opportunity!). It's part of a soft launch series with baguette, ciabatta and rustic Italian breads. This weekend we'll release the sourdough country set followed by some very special breads in December (some which are familiar to my former subscribers ;).

I'm really grateful to continue my long relationship with by using their heirloom grain flours in all of our new breads. Even the "white" ones have a decent proportion of whole grain Yecora Rojo wheat and Wren's Abruzzi rye. Everything is made using an extensive multistage process and over 40 hours of fermentation. Look for the red "Made with Barton Springs Mill" label.
