As 2024 comes to a close and marks 4 months since opening our brick & mortar on South Congress, I wanted to reflect back on our milestones throughout the year that I'm so incredibly grateful for ✨
January: I moved our new (very tiny, but mighty) food trailer in and made some great friends .little 🔥 We even did a collab with Eggman on a savory Belgian waffle! 🍳😋 We built a wildly supportive customer base over the next 7 months and loved seeing them come back week after week ❤️ This month also marked 1 year of producing out of where we began this beautiful adventure in Austin back in 2023 🥹
June: I saw what would become our new space listed on Marketplace for lease and immediately knew I had to jump on the opportunity — I was so confident this would become our new home that I asked them to bring the paperwork to sign when I came to see it for the first time (and did, in fact, sign it on the spot)!
July: I got the keys to our new space 🔑 and we moved our production over mid-month and then closed the food trailer at the end of the month, excited for a new chapter! I spent July into August building out the space — from getting our kitchen equipment & back-end organization set up to installing the menu signs and building the checkout counter to driving all across the state (actually) to piece together our displays from Marketplace — it was a tedious but really fun project!
August: I had to push our soft (and Grand) opening back 1 week after getting COVID, but then both turned out even better than I could've imagined 💕 so thankful for coming out and putting together such amazing content that they shared with everyone on IG — this made for a wonderful Grand Opening and so many new customers in the coming months! ✨
