Summer Flavor 4: Key Lime Pie 🍋🟩🥧
I recently had the distinct pleasure of taste testing an incredible piece of Key Lime Pie from my neighbor (who also happens to work for eatbanditos, so you could have had a piece too!). After scarfing that down in about 5 seconds, and wanting to eat a whole pan of it, I knew I had to figure out some sort of cookie that could capture all the goodness of a slice of pie!
Enter this DIVINE cookie! A beautiful graham cracker lime cookie nestled around a delicate key lime filling. 👩🍳💋
And, as a bonus, I realized that the thought was originally planted in my brain last summer when one of my most loyal customers asked if I would ever consider making a Key Lime Cookie Pie (because he loves our Cookie Pies). It’s not a Cookie Pie, but it’s a pie cookie!! 😅 So Braiden, this one’s for you!!
