I absolutely love every single thing about our newest loaf. Classic Country Sourdough. This loaf is clean, bright, creamy, tender and just the right amount of sourdough. The flavor still has the complexity of sourdough, but it dances with a soft brightness. The crust has a thin crackle that is so golden.
And little known fact, every one of our loaves has its own signature score. That way there is never any confusion while we pack up. It is impossible to tell for certain the difference between a Golden Italian, Tartine and a Classic, but we always know by the score on top. And the Classic score has won my heart. As I score it I am reminded of a shaft of wheat bowing under its own weight. After the bake, it looks like a shell.
