Oh, the weeks are flying by! And spring is here!

We are sad to announce that we will be moving out of this community and state. We have been so blessed by this town. We are extremely grateful for our wonderful customers.

As a family who like to travel and live in new places, we have yet to come across one that is so kind, welcoming, generous, inviting, than this one.

A new adventure awaits.

We are putting our house on the market this next week. If you know of someone who is in the market, send them our way!

With long and deep consideration, I will not be opening the bakery back up this spring. I may with time, look at later this year but as of right now, I will be focusing on my growing family and their needs.

I truly enjoyed every single bit of what we did last year. We had so much fun meeting so many great people!

I love sourdough for all the beneficial aspects. The process of soughdough breaks down the phytic acid found in all seeds and grains. This allows a "pre-digestion" process that is helpful for absorbing all the beneficial vitamins and minerals in the grain.
There are a few ways that this is accomplished.
By the process of using a natural yeast (sourdough), soaking overnight in an acidic median (whey, apple cider vinegar) as was done for oatmeal and porridge in the past, and sprouting seeds before grinding into flour.

I choose the sourdough process in my bread because the flour is readily avaliable.
I specialize in long fermentation on all my sourdough items. That includes all Scones, cookies, English muffins, waffles etc.

So, if you are looking for a treat with also the added benefit of the digestiblity of the flour, choose a long fermented treat. (OH, and for the deliciousness as well!!)

Getting back into the swing of things.
Made four loaves today and I feel like it's foreign making so little of an amount!
We will likely go through this in two days.

On average, how much bread do you go through in a week?

Also, had the energy to make a gallon of yogurt, and kombucha. If you need or want to try out Kombucha, I have some extra scobys avaliable.

I know it's been awhile.... this cold weather is definitely making me want more soups and stews. Brrrr.
I have been really enjoying all the snuggles with the new baby and all my other children.
Thank you all for the well wishes on our new addition.
We had a beautiful baby girl born on the 1st!

The plan is to open the bakery back up in February, so stay tuned!

So, instead, meal prepped a ton of things.

Sourdough par-baked pizza crust! Looks like a possible new addition to the menu. Healthy, quick, and delicious meal for week night. These freeze amazingly well!

Did you freeze a loaf of bread a few weeks ago?
When you pull out to eat again, allow to thaw completely on counter, then place in a 400° oven, for 3-5 min, or until crusty.
Slice and enjoy as usual.

I cannot express my gratitude for all of my customers! This has been an amazing year and I am looking forward to all the joys to come.

This week was my largest porch pick up!!. ☺️

Over the weeks to come, I will post a few things here and there, talking about new recipes that I will introduce when I come back, as well as other great tips.
