The part of baking people don’t always show. 🤍
Baking is calculated. Measurements matter. Temperature matters. Ingredients matter. And when you’re baking gluten-free, sometimes even the smallest change can completely change the end result.
This week humbled me a little.
I made multiple cake layers that I wasn’t happy with, so I scrapped them and started over. The final cake came together beautifully, and I was so proud of the design—but afterward, I learned that the texture inside wasn’t what I expect from something leaving my kitchen.
I tried a whipped-style icing that was much softer and higher in moisture than what I normally use. After seeing the cake once it was cut, I believe that extra moisture soaked into the layers and left parts of the cake with a gummy texture.
And that bothers me, because pretty isn’t enough for me. It has to taste good too.
So I made it right with my customer, and I learned from it.
Owning a small baking business means celebrating the beautiful cakes, but it also means owning the ones that teach you something. Sometimes a recipe works perfectly. Sometimes you have to scrap four layers and start again. And sometimes you don’t realize something went wrong until after it leaves your hands.
I’m still learning. Still testing. Still improving. And I’ll never stop caring about the quality of what I put my name on.
