I remember it was time to celebrate my daughter’s birthday and instead of the traditional birthday cake she likes red velvet cupcakes to celebrate her day. Well I was cool with that because I’d simply pick up several dozen from her approved bakery. lickers) held the honor in her eyes for baking the best red velvet ever! So it was great that this particular bakery passed my daughter’s test. So just like all the other years of celebration, I stopped by the bakery to place my order and NO red velvet cupcakes! Big problem!!! That left me to bake the cupcakes and I’m no whiz in the kitchen… all the cakes I baked came straight from the box! However, I went full steam ahead to bake a good old southern red velvet cake made from scratch and I added a lot of love and prayer to the recipe! During the birthday dinner, my husband, daughter and her siblings were eager to taste the cupcakes that I had arranged on two tall white cupcake tree holders, it really took courage for me to present the cupcakes. My daughter walked to the cupcake tree holders filled with red velvet cupcakes in white paper cups, spread with a fluffy sweet butter cream cheese frosting and topped with pecans from my mother’s yard back home…I have fond memories of picking pecans when I was a child to buy gifts for the holidays. Well back to the first bite…she took a bite to start her critique. At first, I watched from a distance. These weren't her Granma’s or approved bakery cupcakes, this was personal they were mine! I already began playing all the jokes they’d say about my cupcakes in my mind. But suddenly I noticed something. I moved from my position for a closer look. My daughter had a BIG smile outlining her face. She said, “They’re legit, they taste like Granma’s.” Those words were the greatest gift to me that day and I served up my approved red velvet cupcakes with confidence and pride. My daughter posed in front of the cupcake trees for a picture. My family of six laughed as we ate cupcakes and celebrated around the kitchen table. The cupcakes were moist and delicious, my family enjoyed them, but what struck me was how I worried and doubted myself to handle the task. I was sure they wouldn't come close to tasting like Granma’s in the South, but as I continued to bake with courage and overcame my fear of the cupcakes being horrible…I’m happy I saw the task to the end because those cupcakes tasted grrrreat!!!! (in my Tony the Tiger voice). I returned my thoughts back to the table and Red Velvet Mama was born and the rest is history....
