My favorite hot drink around the holidays is a good and rich peppermint mocha from Starbucks. Follow this recipe for delicious cupcakes that give you not only a great taste of the holiday classic, but a fun and festive look too. Cozy up with this yummy treat, perfect for Christmas, NYE, or for anytime throughout the winter months. Enjoy!
Hereβs what you will need:
Chocolate or Devilβs Food box cake mix (or your favorite scratch chocolate cake recipe)
3 eggs
Β½ cup vegetable oil
1 cup freshly brewed coffee
Peppermint extract
Whipped vanilla frosting (can or scratch)
peppermint snap cookies, peppermint bark, or crushed peppermint/candy cane
Christmas straws
Christmas cupcake liners
Instruction on how to make:
Follow the box cake recipe and instructions, but instead of using βwaterβ replace with your 1 cup of freshly brewed coffee. If using a scratch cake recipe, add ΒΎ cup of brewed coffee. Add a drop or 2 of peppermint extract to batter. Line cupcake pan with your festive Christmas cupcake liners. Pre-heat your oven to 350 degrees.
Carefully scoop cupcake batter into liners. For perfect and even size, I recommend using an ice cream scoop. Bake for 15 min. After baking, allow to cool for at least 15 minutes before decorating.
Using your canned or scratch vanilla frosting. Add 1 drop of peppermint extract and mix well. Do not add too many drops, otherwise you will overpower with peppermint flavor.
Using your piping bag and preferred tip, pipe your frosting onto the cupcakes. For garnish, you can top the cupcakes with either crushed peppermint snap cookies, crushed peppermint bark, or crushed peppermints/candy canes.
Cut your Christmas straws in half. Stick Β½ straw into each cupcake on an angle, for a βdrinkβ theme. ENJOY! Merry Christmas!
