A wedding cake with a nod to The Avengers?? Indeed! This couple wanted a geode cake in a gradient of colors from the infinity stones with pops of gold. And hey whether you are into Marvel or into rainbows or into gems or simply into cake, it’s a win win win win.
Inside was vanilla buttermilk cake with vanilla buttercream. Classic, but great!

Is there a prettier sight than a Bakey Bakes wedding cake tasting? Maybe, but it’s up there!
My next tasting day is May 25th so if you’re getting married in the next 6 months and haven’t booked yet, better get to it so you don’t miss this one! There won’t be another tasting day until July.

It’s crazy to me that it’s been almost 3 years since I developed what is now my most popular flavor. A flavor inspired by the cakes I ate at every celebration growing up in Portugal and I named it the Portuguese Birthday Cake: Moist layers of almond cake with a hint of lemon, filled with traditional egg yolk cream dusted in cinnamon. I feared introducing this flavor to all of you back then because I was convinced nobody would be interested in something they are not familiar with, and as a made-to-order bakery, nobody would even be able to try it before ordering it. Somehow you all trusted me and ordered it anyway! Word of mouth and your glowing reviews has not only made it my most ordered flavor now but you also regularly include it in your most special celebrations! Like this wedding cake for example, this was ordered by a couple who requested that all 250 servings for their wedding should be this flavor. That means 250 new people now know how special it truly is and are now familiar with a little taste of my country and culture. That is magical indeed 💛
A cake for my own family for once?? Indeed! I took most of March off aside from weddings which gave me the freedom to spoil my dad and sister whose birthdays are on consecutive days in March. I decided to surprise them with the design and focused on something I wanted to practice which was piping buttercream on the sides of cakes, which is NOT easy in the least. I chose a beautiful pattern by @riflepaperco as my base and went from there with my cake interpretation of it. It took exactly 4 hrs to do the decoration alone and this is my smallest cake size! That I didn’t anticipate 😅 Should this sort of design be requested by a client in the future, I’m now prepared to estimate the time it will take, but can you imagine a multiple tiered version of this?? 😍
The flavor was requested by my sister, she wanted my now retired Hummingbird cake, which is an extremely moist and flavorful banana, pineapple and pecan cake. The filling I chose to pair it with was coconut cream cheese frosting. Really hit all those tropical notes to go with the design. Who needs real flowers when you can have flowers made of frosting?? All 100% buttercream, carefully piped by hand 💕🌸 The advantage of buttercream flowers is that you can have out of season flowers in any color you want that won’t wilt!
A question I get asked a lot is “Which of your cake designs can I get for the starting price?”. The short answer is: none. The base price gets you a cake with frosting much like the one in the picture, which isn’t a design at all. Not that there is anything wrong with a classic celebration cake or ordering a cake for a quiet evening at home because flavor is what you’re the most interested in. The starting price is just that, a starting off point that encompasses the time and ingredients required to create a frosted cake. Every single design element you see on my cakes requires different levels of time, material costs and techniques. This is why the quoting process is so challenging and time consuming! The hardest part of my job is calculating and estimating how long something will take. I’m sure so many of my fellow bakers can relate to charging for a 3hr job that ended up taking 6hrs. This gets better with experience but it’s still something any maker struggles with. All this to say, when inquiring for a custom cake, please remember that the starting prices are a jumping off point, so setting your budget for a higher number is more realistic when your dream is a buttercream flower cake for example. It’s not possible to list prices in any other way because everything is so custom 😊.

Got to make a 2 tiered porcelain cake based on Royal Copenhagen china this weekend (you may Google to see what those look like)! I think I met my match though, piping thin lines on the sides of a cake is NO JOKE! Piping the top is a cinch but the sides are a whole other level of precision and material cooperation. The amount of times my piped lines kept “breaking” is innumerable because of well…gravity. You can’t really stab the side of the cake with the piping tip so you have to hover, squeeze and let gravity do the rest. I also had a bizarre moment with tremors, my hand was shaking so uncontrollably that for a second I though I wasn’t going to be able to finish. Would love to never have that happen again 😳. Glad I pushed on and that she made her way to the @wyliehotel in all her glory and hopefully not showing obvious signs of my struggles. Congrats again @shaughnmarie and @bendyspatula!

This romantic little buttercream flower cake had great impact despite the limited color palette and floral varieties, which is a great way to keep costs down on a floral cake! The more colors and flower types it has the more time and labor it takes, which of course drives up the price. I’m always open to providing the client with different options if they have their heart set on buttercream flowers but the budget doesn’t flex for the reality of what a complex and labor intensive cake like that costs.
What do I love more than a lambeth cake? A chocolate lambeth cake!

Which of my cake designs gets requested the most? It’s without a doubt my textured “concrete” cake with gold leaf! I have made this cake over 20 times in the past year alone. Usually I retire designs that get repeated too often because I feel it stunts my creativity, but I derive nothing but pleasure making these. They are never exactly identical and the variation of the textures and gold placement keeps it interesting enough for me. So all I’m here to say is, the concrete cake with gold leaf will live on! Even though nobody actually questioned this nor asked. 😂
March is the month of birthdays!! Not only is it my sister’s, dad’s, husband’s and uncle’s bday this month, it’s also my Oreo Stuffed Chocolate Chip Cookie’s birthday! I started making these in March 2010. They are now 11 years old and still going strong on my menu, so I thought I would give them a little second in the spotlight today instead of a cake. Have you had my oreo stuffed cookies?? Maybe you were one of the lucky ones who snagged the recipe when I released it to the public for a limited period of time!? PS: that won’t happen again y’all, next release will be in a cook book one day.

How insignificant and small it feels to post about cakes right now, but then I remember that if some happy little cakes can bring a smile to those like me who are feeling helpless, sad and uneasy over what is happening on the other side of the world, then it’s worth sharing. Anywayyyyy, I am thrilled with how this massive amethyst geode cake turned out! The marbling of the exterior is 100% buttercream, zero fondant on this gal (or on any of my cakes for that matter). Bottom and top tier were fudgy chocolate cake with salted caramel buttercream, second tier was ube cake with cream cheese frosting and third tier was vanilla buttermilk cake with ube buttercream. Truly a cake of dreams for the coolest couple!

Wow! I just wanted to thank you all again for the most insane turnout Bakey Bakes has ever had, I’m totally honored!! I practically annihilated myself making over 320 items for you (100% by myself) and I still sold out in an hour. The line was so long that I thought for a second that there would be a lot of sad faces by the end BUT even though I was sold out of what a lot of people came for, almost nobody went home empty handed and maybe even got to try something they wouldn’t have otherwise. As I do with every popup, I had a Portuguese pastry and this time I had Broas de Mel “Honey Cakes” which are repurposed cake scraps turned into a whole new honey flavored soft cookie, traditionally what all the bakeries in Portugal do to reduce waste of unsold pastries! They are always filled with such surprises because no two are the same. Did you get to try one?? If not, what did you get and did you love it?? Thank you all so much again.
