As we celebrate Black History Month in February, we look back at many of the individuals who shaped our country and world for the better. African Americans have left their mark on society in countless ways, including the food industry.

One person who greatly impacted the baking world is Joseph Lee.

Owner of two restaurants in Boston, MA including a hotel and catering company. Joseph Lee wanted to minimize the waste of bread so he invented a machine that would convert day old bread into breadcrumbs. It was patented in 1895, but he later sold the rights. Joseph also patented the idea for a automatic bread maker that mixed and kneaded the dough.

Juneteenth (6/19) marks the day when federal troops arrived in Galveston, Texas in 1865 to take control of the state and ensure that all enslaved people be freed. The troops’ arrival came over two years after the Emancipation Proclamation was signed. Juneteenth honors the end to slavery in the United States and is considered the longest-running African American holiday. On June 17, 2021, it officially became a federal holiday.
