did you know there may be another reason to keep joba’s sourdough in your freezer?

when bread cools, some of its starch can reorganize into what’s called resistant starch. resistant starch isn’t as easily digested in the small intestine, allowing some to reach the large intestine where it can be fermented by your gut bacteria.

and freezing is one of our favorite ways to make a fresh loaf last longer!
