Our Story

January 1951 a 16 year old baker fresh from his apprenticeship in Berlin arrived in New York City. The story of Geraldine's Bakery begins...after a stint as a US Marine, marriage to Miss Geraldine herself, a native of North Carolina, three children and twenty years working for other family bakeries, Karl Ernst Dehlow (Big 'E') opened his first bakery in Massapequa, New York. Ten years later he purchased and successfully ran Cheesecake King in Commack, Long Island, NY. His eldest son Frederick Dehlow worked with his father from the age of 14, just like dad. He too is a veteran of the US Navy and upon discharge he became Yum Yum Bakery's main finisher, bench man, bread baker, mixer....what folks today consider a Master Baker. Fred helped Big 'E' manage Cheesecake King for twenty years until 2004 when they decided it was time to close the doors. Everyone was tired and worn out. 2013 with flour and sugar running through his veins, Fred decided to move south and open Geraldine's Bakery in honor of both his parents. Many of our recipes originated from Big 'E's little black book written in code (yes this is true!) and at times difficult to decipher. Fred knows the key! When you step into Geraldine's you ARE stepping back into the neighborhood bakery of your childhood. All scratch-made pastries, danish, donuts, bread, bagels, cakes, buttercream....no mixes here. "I became a baker because I saw the lines of people waiting for a loaf of bread paying with all the money they had....this was during and (directly) after the war (WW II) in Bremen. We were starving, cold and had no place to live. I said to myself.....if I become a baker I will always be warm, shoveling that coal into the ovens, and I will always have something to eat."
