Wedding Dessert (their theme was Farmer Wife lol and they asked us to use vegetables from their farm!) so for dessert I made them;

Carrot Pot de Creme
Fromage Blanc vanilla bean mousse
Sunflower seed praline candy
Toasted white chocolate
And a garnish of carrot top 🥕

My new menu is officially out!! The best part? I got to put my name on it proudly 💕

Henley Nashville is the first kitchen to really give me total freedom to create whatever I want. Chef Kristen is someone I look up to greatly and last night with the roll out of my new menu she looked at me and said,
“I’m proud of you.”

I haven’t felt so accomplished in a long time. My first big goal as a pastry chef has been achieved - my very own pastry menu ✅. My second big goal is to have a mentor chef to look up to - finally found one ✅.

Now to start my next phase of chefing, publicize a cook book. Get on tv. Maybe meet Gordon Ramsey?? Let’s see where this year takes me!

Round 1: Blueberry Lavender Icecream with toasted milk powder on the bottom

Round 2: pistachio cookie crumble, orange blossom whipped cream, berry curd, toasted pistachios

Round 3: Orange marscarpone cheesecake, biscoff crust, hot fudge, chocolate pearl

Round 4: Spiced milk chocolate truffle, sweet tea gummy, and honey ginger hard candy
