Have you ever wondered how to get flaky layers in your scones?
The secret lies in temperature.
Most baked goods call for room temperature ingredients.
Scones call for cold ingredients (I use frozen butter), combined quickly and then returned to the fridge before baking.
When the cold scones meet the hot over, the melting butter creates steam that, in turn, creates the layers.
Unless we’re talking about English tea scones, but that’s a story for another day!😉
