It’s been a while since we introduced ourselves, and with so many new followers we wanted to say hello again 👋🏼

I’m Colby, and along with my wife Destiny, we’re the team behind Destiny’s Bakery.

What started as a running joke: that Destiny should have her own bakery whenever I baked things for work events and friends, eventually turned into the Destiny’s Bakery you know today 🔮

My interest in baking grew while working as a supervisor and manager at a retail bakery, where making from-scratch breads quickly became my favorite part of the job. That interest really turned into a passion during paternity leave, when I started making bread and testing more recipes at home while caring for our newborn son, Xander.

Shortly after we both returned to work, we decided I would step down to part time and work 3 days a week and be the primary stay at home parent with Xander. With more time at home, the baking kept going. When family and friends started asking for breads and pastries, we realized this hobby might be something more so we went for it 😬

Behind the scenes, Destiny helps make it all happen; managing social media, designing market flyers, helping package baked goods, brainstorming new menu ideas, and jumping in at markets when she can (which for the record; she held down our biggest market to date in Orlando when I forgot my wallet at home 🤦🏼‍♂️)

Fast forward to today, and Destiny’s Bakery I just over 2 years old and has grown way more than we could of imagined thanks to pop-up markets, porch pickups, word of mouth, and the incredible support of our community.

Alright, I lied. We can’t stay apolitical

In the past I’ve been worried about how my business’s “professionalism” is portrayed to stay available to all. For my own sanity and mental health I just can’t stand by that logic anymore.

After snagging some fresh milled flour on vacation, I researched whole grains and fresh milled flour the entire time back to learn as much as I could. It’s always been intimidating to me so this bake was all about learning and understanding.

Whole grains, wheat-forward doughs, and ancient grains all behave differently, and I wanted to see those differences side by side while working out kinks with the new fridge (good news I did 🎉)

Same kitchen, same process. Different formulas, hydrations, and grains. And for the first time handling these grains I’m very happy on the final product 😍

I haven’t tasted them yet (that’s coming), but even before the first bite, these loaves have already taught me a lot about fermentation, structure, and how whole grains respond at different hydrations.

We’ll be posting flavor notes in our story later!!

Learning never stops along this journey, but it’s very excited to have new process work well and we can build on that to bring you the absolute most delicious bread you deserve 🖤
