my parents instilled so much in me as a kid that i keep with me today. because of them i’m a voracious reader and lifelong learner. an animal lover and a crafter and someone who really, really appreciates punctuality.

for my girl, julia? i want her to know sourdough. no, i didn’t get my own starter passed down through generations or learn techniques from my great great grandmother, but i want to start this tradition with her. so she helps me in every facet of this process, and excitedly tells her friends about her baking adventures.

i’m always chasing that elusive sourdough ear! 🥖 i’m pretty pumped with the way this one turned out. my top tips:

✨ proper proofing is king! tom at has amazing bulk fermentation charts based on temperature, and this has really been instrumental in achieving oven spring and a pronounced ear.

✨ ice, ice baby! a longer cold re**rd will help your gluten structure overall, and i’ve also been popping my sourdough boules and batards in my chest freezer for about 30 minutes before baking, which gives such a nice surface to score on.

✨ scoring at the proper angle! for a center expansion cut, a 30°-45° angle is where it’s at. for a side expansion score, 90° is perfect. i’ve also been doing the method of a light initial score then going back in with a super-sharp lame at the 7-9 minute mark in the oven and deepening the score to 1/2”.

✨ get outta the heat! i’ve learned that cooking at too high a heat prematurely seals off those expansion scores. i used to preheat my oven to 500°f for an hour before baking, but an infrared thermometer let me know my oven runs hot! i backed that down to a 450°f preheat for a half an hour and it’s helped my dough spring to life, giving me the ears of my dreams.

did you know i used to be a nonprofit executive director? ceo in nonprofit-speak. i worked 100-hour workweeks and was *very invested* in my career. it had sort of become my entire personality, to be honest. my loyalty was unwavering so i was in for quite the shock when i was laid off early in the pandemic. following in quick succession: getting covid myself, enduring ivf, a much-hoped-for but very complicated pregnancy, ppd, the diagnosis of a disabling genetic condition, and breast cancer. phew!

to say i had to slow down was an understatement. so i threw myself into being a stay-at-home mom while navigating myriad medical appointments weekly. but i needed something to help me feel like my old self. i’m a nutritionist and cook, was working on healing my gut, and finally got into the sourdough craze a few years late. i was hooked.

i didn’t set out to make this a business, but after months of baking for friends and family, i launched my microbakery. to be able to share something i love with my community while supporting my toddler and myself is the greatest gift!

i mean, we’ve all been there, right?! 😅🤣

you’ll find all sorts of strict sourdough instructions on these here internets. some people are *very particular* about schedules above all else. you’ve probably seen photos of home bakers sitting on the floor of a gym with a bowl of dough, doing stretch + folds between sets. or pictures of a banneton buckled into the front seat of a car. i once thought i was about to coo at an adorably bundled infant in the front of a target cart, only to find it was, in fact, a blanket-wrapped pyrex with a jiggly, bulk-fermenting yeast colony nestled inside. (to be fair, also adorable to a sourdough-obsessed lady.)

in the beginning of my sourdough journey i definitely felt the pressure to do everything “right”. now I realize there are so many ways to do sourdough! the wild yeasties are resilient. your stretch + folds can wait a bit while you tend to life. you can totally fit sourdough in and around your schedule without becoming beholden to a rigid schedule.

but if you’re an introvert like me, feel free to use your stretch + folds to get out of any event of your choosing!!
