Morning glory muffins didn’t get their name by accident! These bad boys are basically a carrot zucchini muffin, only sweetened with sweet potato & maple syrup, and they’re almost paleo (just a little brown rice flour in there) so think lower glycemic good good. Full ingredients below:
sweet potato puree, maple syrup, carrots, brown rice flour, zucchini, coconut oil, walnuts, flax meal, tapioca flour, coconut flakes, aluminum free baking powder, cinnamon, psyllium husks, baking soda, apple cider vinegar, vanilla, sea salt, cardamom (GF, SF, DF, EF) ✨✨✨

I’d have to say, along with enjoying the smells of cinnamon and fresh baked breads in the air every day, creating custom cakes for our gluten free community ranks pretty high up there. So many different occasions and it’s an honor to listen, hash out ideas, and then help create something special for people to surprise/share/celebrate with family and friends. So next time you have a special occasion coming up, think cake. Cake is always the correct answer lol.

Always love making unicorn cakes knowing how much the kids enjoy them. I know it can feel crazy between hosting and with all the extra little ones running around at the party but it’s always worth it when the star of the show sees their cake! 🥳🦄🎂✨
