My favorite ice cream flavor of all time!! (Don't knock it 'til you try it!)

Coffee Oreo has held the #1 spot in the ice cream section of my heart since I was a kid (ironically long before I drank coffee).

There's something about the earthy, nutty coffee flavor that melds with the sweet chocolate crunch of Oreos in the very best way.

I've never seen the flavor dairy-free, so I combined two containers of coffee ice cream with 20 double-stuf cookies, and let me tell you, I cannot believe I didn't do this sooner!! (Also think of the possibilities using Oatly flavors as an ice cream base...)

I sandwiched the ice cream between my homemade brownie layers and the result is a dreamy mocha showstopper dessert that's easy to make and so fun to share with family and friends (...or not).

I just finished the filming and photos for the recipe and will have it all ready to share next week!

Every time I make these, someone tells me it's their new favorite cookie bar flavor!! 🍋

The soft and luscious lemon sugar cookie texture melts in your mouth while the poppyseeds add such a satisfying slight crunch.

They're bright and citrusy and bring the sunshine vibes whether it's actually sunny and warm outside or not. (Save this recipe to come back to in the winter, too!)

They're quick and easy, all baked in one pan, and the bars can be cut as big or small as your heart desires.

And they're naturally dairy-free and vegan, with an option to make them gluten-free, too. Bake once, share with everyone!! (Or keep them all to yourself ...)
