One of my go-to, crowd-pleasing red, white, and blue desserts! 🍓🫐🤍

Strawberry shortcake is quintessential summer.

I first made these for Father’s Day last year and set up a little build-your-own strawberry blueberry shortcake bar. Complete with undetectably dairy-free and vegan shortcakes (that can be made gluten-free too), both regular and non-dairy whipped cream, and lots of fresh strawberries and blueberries.

The combination of fluffy, flaky, tender shortcakes with luscious whipped topping and juicy berries is a burst of sunshine and summertime in every bite.

Perfect for patriotic holidays, like MDW!

The shortcakes themselves are naturally vegan and can easily be adapted gluten-free with gluten-free flour.

For the whipped cream, depending on who’s eating them, you can do both regular whipped cream and dairy-free. My favorites for non-dairy are whipping cream and oat whipped topping. I typically don’t sweeten it. The creamy, light flavor and texture pair beautifully with the subtly sweet shortcakes and natural sweetness of the berries.

When life gives you lemons…make Lemon Poppyseed Cookie Bars!

There’s nothing I love more than the inspiration of a bakery classic to create something new and different. Lemon poppyseed is such an iconic muffin flavor, so why not turn those flavors into a cookie bar!

These beauties have a luscious lemony flavor with pops of poppyseeds, each bite will melt in your mouth.

Cookie bars are my fave because you can cut them to whatever size you want, keep some in the freezer, and/or easily share them at a BBQ or party.

💚 Plussss they’re undetectably vegan and dairy-free, and can easily be made gluten-free too.

A little bit of life lately. ✨

Real talk: the first quarter of the year completely breezed by!

I do, however, feel like winter has been 10000 years long here in MA, so I’m ready for sunshine and glorious springtime.

🍋 Warmer weather flavors are in full swing! I’ve been making all sorts of luscious spring bakes. Lots of cookie bars, like Lemon Poppyseed, Oatmeal Coconut Chocolate Chip, and S’mores for clients, friends, and gifts. Angel food cake (Cole's request). And Carrot Cake Bars with dreamy cream cheese frosting for Easter with family.

(I’ve written a few of these recipes ^ over on FetchingGoodies.com and will share others in the coming days.)

Cole and I completed egg retrieval #4 of our fertility journey last month and recently found out we didn’t get any viable embryos from this round. The struggle is real, and yet feels wholly unreal at the same time.

The day we found out was the same day we were booked to go to Providence, Rhode Island for the weekend for the comedy festival to see and . It turns out sometimes the best coping mechanism is laughter. Complete with moody cocktail bar vibes at and .

🍪 That, and baking. Baking has been, and continues to be, my happy place. There’s something magical and therapeutic about taking simple ingredients on their own (flour, sugar, vegan butter, chocolate); combining them to create something unique, scrumptious, and undetectably dairy-free; and sharing them with family and friends.

We have one frozen embryo at the moment. The hope is to have a few more to increase the chances of success, and, provide the possibility of having more than one child.

So, we’re going to try a 5th egg retrieval. And will send every positive vibe into this round.

But first, a month break from injections for my body to reset. A little more time in the sunshine, by the beach, and baking.

Throughout this process I've tried to stay positive and open. Control what I can control. And appreciate all that's good. And that is what I shall continue to do!

🎄✨Christmastime in Italia

BRB, I’m fetching Goodies in Italy!

I took my first trip to Italy four years ago and fell in love with the way of life, the people, the language, the architecture, the food, and the wine. The trip has since become somewhat of a tradition.

This was time #3 and it was nothing short of magical. Everywhere we went was completely decked out for Christmas with glittering lights of all shapes and sizes, holiday music, festive foods. It gave me all the same warm fuzzy feels and vibes as the first time.

We went to Montepulciano, Florence, and Rome. All places I’ve been before, so while I did still go to some sights, this trip was more about simply living.

I made Moka Pot coffee for the first time (and bought one to bring home because now I’m hooked).

Sipped lots of + Brunello & Vino Nobile di Montepulciano wines.

Saw the Olympic torch get lit while staying in Montepulciano.

Enjoyed (vegan) croissants from different pasticcerias (pastry shops) every day (which I realize aren’t Italian but they are everywhere and incredible).

Shopped for gifts and homemade cantucci cookies at Christmas markets.

Reveled in dairy-free pizza at and

Took in sunrise and sunset from our airbnb balconies.

Dined at some of our favorite spots from past trips like

Picked up fresh produce, pasta, and meats at to cook dinner in.

Embarked on an 8-course cocktail & food tasting in the Labo-ttega – #22 on the list of the world’s best bars.

Spoke Italian almost everywhere we went (that daily Duolingo being put to good use).

Put olive oil on everything.

Took hundreds of photos, sharing a few faves.

FALL IN A JAR 🍎🍂

Every time the leaves start to turn colors, I look forward to breaking out my crockpot and making a big batch of creamy apple butter.

All you need are apples, sugar, and spices. The end result is a dreamy, jammy, apple spiced spread that you can slather on toast, dairy-free cheese, ice cream, turn it into apple butter cookie bars, give it as gifts, or eat it by the spoonful.

It’s super simple to make, the crockpot does most of the work, and the intoxicating smell of apples and cinnamon that will fill your home is irresistible.

Ok stay with me, I know Halloween is over but this recipe for Chocolate Cookies ‘n’ Cream Cookie Bars is just too good not to share (and baker tip, you can leave off the sprinkles to bake them year round, OR…add holiday sprinkles instead).

They’re a rich chocolate cookie bar that’s loaded with semi-sweet chocolate chips, white chocolate chips, and lots of crushed up Oreos, and then topped with another whole Oreo, and lots of sprinkles.

They're undetectably dairy-free (with a vegan and gluten-free option) and are loved by both kids and adults. If you love Oreos, these bars are a must.

Life lately. Let’s catch up, shall we 🤗 →

The days are flying by over here (as I’m sure they are for you, too. How is it already November?!), and though I’ve been a little quieter on social media, there’s been a lot of life going on.

Three and a half years ago, Cole and I started trying to have a family. Now, after lots of tests, countless blood draws + shots, and three egg retrievals later, I am thrilled to say that we officially have one viable embryo — and it’s a boy. 😭🥹

There’s still a journey ahead. The next step is transferring the embryo and trying to implant (aka actually getting pregnant). There’s no telling if that’ll work or what happens next, but I feel like I’ve been holding my breath, wondering if we’d ever get to this point. So I’m going to celebrate one small win. One step forward. To actually have the ability to try. 💙

I’ll keep you posted on the journey, as always. I know a lot of others are going through something similar, and I hope you know you can reach out to me any time. Going through it sucks, but going through it alone can feel impossible. Grateful for each of you.

Amid the fertility appointments and protocols, I started a new job in August and am continuing to grow the community. Even as I say that, I’m trying to be more intentional with time. To honestly do… less (easier said than done, but a bit at a time). Spend time outside. Get off screens. Enjoy acupuncture and date nights in Boston. Walk Pippa. Connect IRL.

And there has been no shortage of baking! Fall is one of my favorite seasons to bake for (I could say that about every season, but it’s true). I’ve got recipes coming for apple butter, pumpkin bread, apple pie bars, Halloween cookie bars (you can save that one for next year 😆), and more. Life is a wild ride. Baking is my happy place, and I hope it can be that for you, too — or you can just enjoy the yummy photos and videos. 😉

I made these cuties for 's son's birthday party today!
