The market wraps up at the end of October, and our inventory is getting low. Here is what we have:

I have to admit, there’s something pretty satisfying about looking at this jar and knowing it started out as beef fat.
Instead of letting the fat go unused, I rendered it down and ended up with this beautiful jar of homemade beef tallow.

We have beef fat in 2 lb packages. It takes about 4 lbs to make 1 quart of tallow.

As we move into fall, now is a great time to buy your beef fat to render into tallow. There are very few steps to this process.

1. Put the beef fat in a crockpot, roaster, or Dutch oven.
2. Cook on low heat. The goal is to melt the fat. Do not let it boil.
3. Once melted, strain into a container.

You can use it at your next fish fry, to sear steaks, fry potatoes, or roast vegetables.
