Let’s make pane siciliano! Tender and a little nutty, we usually eat this as a side with dinner!

Pane siciliano

260 g semolina flour
260 g bread flour
4 g commercial yeast
9 g salt
340 g warm water
28 g olive oil

Protein bagels:
100 g active starter
100 g water
200 g blended cottage cheese
40 g honey
410 g bread flour
40 g vital wheat gluten
10 g salt

Makes 8 bagels at 274 cal, 15 G protein each

Join me as I make birthday cakes for my twins. Daughter wanted Rapunzel cake (strawberry), and son wanted Batman cake (chocolate). I think they turned out pretty good!

Trying out pesto Parmesan bagels, using homemade pesto. I planted basil at our new house and it’s going crazy, so I have A LOT of pesto (seriously, let me know if you want some lol). I made a similar version at my mom’s house, but didn’t write anything down. This is me starting the process of trial and error to nail down my favorite ratios. I ended up using way more pesto and less parm than I predicted, and I think the end result still needs some work to get a chewier texture, but it’s a great starting point. My husband said this was his favorite bagel flavor so far!

My husband usually makes the crepes, but today was my turn 😁 my kids’ favorite meal, they even request it for their birthdays lol. We eat them with cheesy scrambled eggs and bacon (and I like hot sauce), or with berries and cinnamon sugar!

Every weekend, I make bread for our family. Usually sandwich bread and bagels, sometimes prep dinner rolls or naan for later in the week. Yum!!

Homemade sourdough dinner rolls! Kids devoured them! Made 16 rolls and there were exactly ZERO left after dinner 😋 starter getting stronger our move across the country, but still another month until HHG arrives and we have a full kitchen again
