RECIPES: Grilled Pineapple with Vanilla ice cream and Pineapple plank grilled fish!

Okay, so this is more of a look at the picture and do the same thing type recipe, more like dinner inspiration. In just a few weeks, summer will be over and school will be back in session. Also, the awesome prices on fruit at the grocery store will start to dwindle away.

Also, I heard Blue Bell ice cream will be back in stores very very soon. This really makes wish I had a grill, besides my George Foreman.

So first up, get a pineapple, cut the sides off, save for the next recipe and grill it. Rotate until the color looks good like in the photo. Then slice, take the core out and scoop some ice cream on top! I'm partial to Homemade Vanilla, but Vanilla Bean is what is pictured. Someone on Pinterest suggested a couple of options, like coconut ice cream, or soaking your pineapple in rum first. Im not sure how the rum wouldn't catch fire, so make your choices wisely.

Second, the pineapple sides you cut off can be used as planks to grill your fish! The link for directions is below. They served it up with grilled zucchini and grape tomatoes I believe, which is kind of making me hungry.

Recipe!! Best stir fry sauce!

My son really likes Asian food, especially Japanese cuisine. Stir fry gets him all sorts of excited, no matter what vegetables I put in with it! This past spring I made lunch for our department meeting at work and he gobbled up the leftovers that night, asparagus and all. Said it was my best batch yet. So here's my recipe for the sauce I used.

What's great about this sauce is that it goes well with chicken, pork or beef. If you can marinade your meat for several hours or even overnight, it's amazing. If you don't have time for that, its okay.

You can serve your stir fry over rice or with noodles. I'm partial to udon noodles. If you use udon, make sure you rinse them well after boiling before adding to your wok or skillet.

I typically cook all the meat first, then add a bit more sauce and my vegetables, then add boiled udon last few minutes.

STIR FRY SAUCE

1/2 cup low sodium soy sauce
1/4 cup rice vinegar
4 Tbsp Each of honey and minced garlic
1-2 Tbsp of ground ginger

Whisk together well. This batch will cover about 1lb of meat plus veggies if serving over rice. If serving with 🍜 noodles, I usually double. If you marinate your meat overnight, discard the leftover sauce in the bag/bowl. Add fresh sauce when adding to veggies and noodles.
