Some people wonder why macarons are so expensive . Macarons are extremely finicky , this is the same recipe , just a slight difference in mixing . It creates a completely difference result . Macarons are the perfect bite of chewy inside and crunchy outside . Anything goes wrong they become unstable and easily broken shells. Alongside the difficulty and time of these French Cookie the fillings and buttercreams inside also add to their price.
