When the summer months come, I find it almost impossibly hard to resist buying fresh blueberries by the double basketful.

Thank goodness they're such good brain food! (These days my brain needs all the help it can get.)

My twelve year old nephew is in town which is perfect excuse to make shortcake of any variety.Unlike with strawberries, where all you have to do is cut them and sprinkle them with sugar, to get the blueberries juicy enough for shortcake it works well to cook them, just a little, with sugar. This way more juices are released.

This recipe makes a lot of blueberry topping. If you find you have leftover, it's great over ice cream, or better yet, pancakes.

The most important thing to know about steaming broccoli is that cooking the broccoli any more than seven minutes tops risks overcooking it. After seven minutes the broccoli will turn olive green, instead of that beautiful vibrant green color we want.

So, to make sure the broccoli is perfectly cooked, here are a couple tips:

TIP 1: Get the steaming water hot and steamy first, before adding the broccoli to the steamer basket. A quick way to get the water hot is to use a tea kettle.
TIP 2: Set your timer for only five to six minutes. Smaller florets of young fresh broccoli may only need five minutes to cook, larger florets of more mature broccoli made need six. I recommend starting with five and then testing the broccoli with a fork to see if it is cooked through.

Fall is here and it is soup season once again. This roasted eggplant and tomato soup recipe is a terrific recipe from Martha Stewart's (now defunct) Everyday Food magazine.

The flavors of the roasted tomatoes, garlic, carrots, chickpeas, and curry combine beautifully in this vegetable soup while the roasted eggplant gives the soup its substance.

I don't usually like tomato soups, but this one has lots of flavor. We have found that it tastes even better the next day, as the flavors have had more time to blend.

Mild and buttery acorn squash filled with sage, rosemary, wild rice, apples, and ground turkey makes a satisfying complete meal for two.

I love how tart apples and dried cranberries amplify the hint of sweetness in the squash. Wild rice is so pretty and has an earthy flavor and chewy texture. Combine all of those tasty bits with ground turkey, celery, and herbs and it adds up to supper in one nice package. I’ll take it!

This is an unbelievable, restaurant-quality, creamy Caesar salad dressing that will make you swear off of anything store-bought again. Great for your classic Caesar salad, or as a dip for all kinds of veggies. Will NOT disappoint! To serve, toss with chopped romaine in a salad bowl and shave Parmesan cheese on top of salad; season with salt, black pepper, and a squeeze of fresh lemon juice.

Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.

Step 2
Heat oil in the cooker. Add sausage and cook until no longer pink, about 3 minutes. Stir in onion and garlic; cook until softened and translucent, about 3 minutes. Stir in Italian seasoning, salt, pepper, and red pepper flakes. Add potatoes and chicken broth. Close and lock the lid. Select high pressure and set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.

Step 3
Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

Step 4
Stir kale into the cooker. Select Saute function. Cook, uncovered, for 2 minutes. Stir in half-and-half. Turn off the cooker and serve.

In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.

Step 3
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.

Step 4
Bake at 350 degrees F (175 degrees C) for 1 hour.
