法國國慶將至，KANG Artisan Bakery特別邀請【不專業食物工廠】楊桃師傅到店客座，帶來法國經典料理Pâté en Croûte——「酥皮松露鴨鹿肉派」，邀您一同感受法國傳統餐桌文化的魅力。

Pâté en Croûte是一道以酥皮包覆肉餡烘烤而成的法國傳統料理，自中世紀流傳至今，是宴席與節慶餐桌上的經典菜餚。其繁複細膩的製作工序，體現法式料理對細節與風味的極致講究。

本次客座限定的「酥皮松露鴨鹿肉派」，歷時三天悉心製作，以義大利黑松露揭開馥郁香氣，融合紐西蘭鹿肉、本地鴨胸、油封鵝胗、油封鵝心與鵝肝，佐以開心果、杏桃乾、蔓越莓乾與牛肝菌，堆疊出濃郁飽滿、深邃豐富的風味層次。

最後注入以祕魯白蘭地、鳳梨、馬告與百里香製成的晶瑩酒凍，為整體風味點綴一抹清新果韻與草本香氣，演繹經典法式肉派細膩而華美的風貌。

As Bastille Day approaches, KANG Artisan Bakery is delighted to welcome Chef Yang Tao of Unprofessional Food Factory for a special guest appearance, presenting the French culinary classic Pâté en Croûte—Truffle Duck & Venison Pâté en Croûte. Join us in celebrating the elegance and heritage of the French table.

Pâté en Croûte is a traditional French dish in which a richly seasoned meat filling is encased in buttery pastry and baked to perfection.

Dating back to the Middle Ages, it has long been regarded as a centerpiece of festive gatherings and celebratory banquets, reflecting the meticulous craftsmanship and refined flavors that define French cuisine.

Crafted over the course of three days, our exclusive Truffle Duck & Venison Pâté en Croûte begins with the earthy aroma of Italian black truffle, bringing together New Zealand venison, locally sourced duck breast, duck gizzard confit, duck heart confit, and foie gras.

Finished with pistachios, dried apricots, dried cranberries, and porcini mushrooms, each slice reveals layers of rich, profound, and beautifully balanced flavors.

To complete the experience, a crystal-clear aspic infused with Peruvian Pisco, pineapple, makauy, and thyme adds delicate fruit notes and subtle herbal aromas, showcasing the refined elegance and timeless beauty of this iconic French cuisine.
