文華餅房推出全新招牌《扇舞桃韻 》由新任行政西點主廚胡利雲Chef Heat精心打造, 以台灣高山紅烏龍為靈感,將茶的蜜韻花香與桃子的柔甜果香細緻揉合。
瑪德蓮烏龍海綿蛋糕、鹽味馬斯卡彭奶油與輕盈紅烏龍慕斯層層堆疊,佐以慢煮桃子與 杜樂脆焦糖巧克力脆沙布蕾,在茶香、果香與酥脆之間展現平衡。
靈感源自台北文華東方酒店的那把象徵台灣「蝴蝶王國」的古董摺扇。Chef Heat 將島嶼風土的精髓凝縮於盤中:一口,是法式工藝與在地風味的優雅交織。

Introducing the Mandarin Cake Shop’s new signature pastry, “Oriental Peach Oolong”, crafted by newly appointed Executive Pastry Chef Heat Wu.
Inspired by Taiwan’s high-mountain Red Oolong and slow-ripened peaches, each bite layers Madeleine oolong sponge, salted mascarpone cream, airy Red Oolong mousse, slow-cooked peaches, and Dulcey caramelised chocolate sablé, creating a refined harmony of tea, fruit, and crisp textures.
Inspired by the hotel’s iconic butterfly fan, this is more than a cake—it’s Taiwanese flavors, French pastry craftsmanship, and pure elegance in one signature bite.
