主廚為知名大提琴家王心慧Mandy，曾任職於長榮交響樂團首席大提琴至歐美日巡迴演奏，店名CELLO(大提琴)之名故從而得來，曾應邀與周杰倫、五月天、蘇打綠等知名藝人及樂團合作，甚至受邀參與國宴為他國總統來訪演奏。

因心愛的女兒屬過敏體質，對於市面上參有香精、色素的麵包食用後產生疹子，讓她堅定信念，用手作方式打造「無色素、無香精、無防腐劑」的安心食品。
將這份對練琴的精準要求，注入到烘焙細膩的作品。
