Oatmeal Cookies with Dried Organic Apricots🍪
Ingredients
• 1/2 teaspoon Himalayan pink salt, or sea salt
• 9 tablespoon old-fashioned oats
• 1 tablespoon, coconut oil at room temperature
• 1 cupHazelnuts or walnuts
• 1/4cups Raisins
• 1/4cups Tahini
• 1/4cups water or cold coffee
• 1 teaspoon pure vanilla extract
• 2 teaspoon cinnamon
• 2 cups Organic Sante Food dried apricots, cut into 1/2-inch dice
In a food processor, beat nuts and Oates together until well combined, about 3 minutes.
In a bowl, stir together the oat and walnut mix with all other ingredients, tahini, apricots, raisins water, cinnamon, coconut oil , vanilla extract and salt. Set aside 10 min
Preheat the oven to 365 °F. Line a couple sheet pans with parchment paper. Scoop the heaping tablespoon sized portions of the mix onto the lined sheet pans, spacing them about 1 1/2-inches apart.
Bake for 15-20 minutes or until the cookies are lightly browned. Let them cool for a few minutes finish cooling.
