The main difference is what they contain and how they work.

Baking Soda Baking Powder

Pure sodium bicarbonate A mixture of sodium bicarbonate, an acid (such as cream of tartar), and a drying agent (like cornstarch)
Needs an acidic ingredient to work (e.g., lemon juice, yogurt, vinegar, buttermilk) Contains its own acid, so it only needs moisture (and sometimes heat) to activate
Very strong leavening agent Less potent than baking soda
Can leave a bitter or soapy taste if too much is used or if there's not enough acid More neutral flavor when used correctly

When to use baking soda

Use baking soda when your recipe includes acidic ingredients, such as:

Buttermilk

Yogurt

Vinegar

Lemon juice

Cocoa powder (natural)

Brown sugar

Examples: Pancakes with buttermilk, chocolate cake with natural cocoa, cookies with brown sugar.

When to use baking powder

Use baking powder when the recipe doesn't contain enough acid to react with baking soda.

Examples: Plain cakes, muffins, biscuits, and many quick breads.

Can you substitute one for the other?

Not directly.

Replacing baking powder with baking soda: You need to add an acidic ingredient; otherwise, the baked good may not rise properly and could taste bitter.

Replacing baking soda with baking powder: You'll need about 3 times as much baking powder to get a similar leavening effect, but the texture and flavor may still differ.

Easy way to remember

Baking soda = needs acid.

Baking powder = already has acid built in.

Think of it this way:

Baking soda is like a battery that needs another component to complete the circuit.

Baking powder is like a battery with everything built in, ready to work when mixed into the batter.

Dry Ingredients
2 cups (250g) all-purpose flour
2 tsp baking powder
1 tsp baking soda
1½ tsp cinnamon
½ tsp salt
Wet Ingredients
1 cup (200g) sugar
¾ cup (180ml) vegetable oil
1 cup (240ml) milk
1 tbsp vinegar or lemon juice
1 tsp vanilla essence
2 cups (200g) finely grated carrots
Optional Add-ins
½ cup chopped walnuts or pecans
½ cup raisins
¼ cup crushed pineapple (drained)
Instructions
Preheat oven to 180°C (350°F).
Grease and line an 8-inch or 20cm cake tin.
Mix the milk and vinegar together and let sit for 5 minutes to make a buttermilk substitute.
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
In another bowl, combine sugar, oil, vanilla, and the milk mixture.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in the grated carrots and any optional add-ins.
Pour the batter into the prepared tin.
Bake for 35–40 minutes or until a skewer inserted in the center comes out clean.
Allow to cool completely before frosting.
Cream Cheese Frosting (Optional)
250g cream cheese
125g butter
3 cups icing sugar
1 tsp vanilla
Beat the cream cheese and butter until smooth, then gradually add icing sugar and vanilla.
Baker's Tip ✨
For an extra moist carrot cake, add ½ cup plain yogurt to the batter and reduce the milk to ½ cup. This gives a softer crumb and richer flavor.

Swiss Meringue Buttercream
Ingredients
4 large egg whites
200g white sugar
250g unsalted butter, softened and cubed
1 tsp vanilla extract
Pinch of salt
Method
Place egg whites and sugar in a heatproof bowl over simmering water (double boiler).
Whisk continuously until the sugar dissolves and the mixture reaches about 70°C or feels smooth with no sugar grains.
Remove from heat and beat with a mixer until stiff, glossy peaks form and the bowl is cool to the touch.
Add the softened butter a few cubes at a time while mixing on medium speed.
If it looks curdled, keep mixing—it will come together.
Add vanilla and salt, then beat until silky smooth.
Tips
The meringue must be completely cool before adding butter.
If the buttercream becomes too soft, chill for 10–15 minutes and re-whip.
Perfect for smooth cake finishes, sharp edges, and piping.
