Believe me, there is something magical about sourdough.
Even if you’ve never met before, if you both make sourdough bread, you somehow find yourselves talking as if you’ve known each other for years, even when you live on opposite sides of the world.

Back then, I was completely obsessed with sourdough, baking bread like crazy at home. I visited Tartine Bakery in San Francisco, one of the true icons of the sourdough world.
I was dying to see behind the scenes, and that’s when I met dear Richard Hart . He generously showed me around the bakery and the workshops and of course, I was beyond happy.

Exactly ten years later, Richard and I met again. This time at Green Rhino Green Rhino Bakery in Mexico City.
A lot happened in those ten years.
In Istanbul, I started with a tiny shop called Pelin Uğur Akün, and later went on to create NINDA Artisan Cafe & Bakery • N İ N D A B E B E K • & Ninda Artisan Cafe
Richard went on to build Hart Bageri Hart Bageri in Copenhagen, followed by the wonderful Green Rhino Green Rhino Bakery in Mexico City.
And somewhere in between, he wrote Richard Hart Bread Richard Hart, Bread book an incredible guide to sourdough baking, and created a bakery at Claridge’s in London.
Ten years later, we met again at Green Rhino and Richard welcomed me with exactly the same warmth and generosity he had shown me ten years ago.
Richard is the perfect example of how, when you’re truly good at what you do, you can succeed anywhere in the world.
Maybe next time our paths will cross in Istanbul. Until then, wishing you all the best
And here’s to the magic of sourdough bringing people together, even ten years and thousands of miles apart.
