How it all became...
There was once another nice, quite typical Samui’s sunny morning when my husband woke up and said decidedly, “I’ve got enough of eating the artificial thing from the supermarkets, which we call bread..I’m Czech! We do have a strong, many generations bread’s traditions...I’m gonna bake MY OWN healthy, real bread! I’m going to bake a SOURDOUGH Bread! That’s how it all started..That’s how we baked our first Sourdough Bread...Well, not that quick. It had been a long journey, believe me, a very long journey of many tryings. Since then, we’ve learned a lot...had studied for many months...had been baking our samples..trying to find the best flour for making our perfectly working starter, which we now call the Ancient Starter, as it has been serving to us for more than 3 years...The strongest thing you have ever think of...natural bacterias. What amazing creatures! Then it just simply happened. In a few months, we had finally baked our first tasty Rye Sourdough bread! But, Ross wasn’t still happy...saying, if it was a traditional Czech bread, it should need to be baked in a real, wood-fired oven. So, it happened. He, as it’s his habit, did, what he said. He built a real, perfectly working wood-fired oven. I’ll tell you, the difference can’t be described, it needs to be tasted..The next bread, which was then baked in this oven, didn’t only looked perfect, it even tasted like from a heaven! Another step had been done. Then, of course, we didn’t baked only for us, we started baking for our friends, which actually gave us the idea to open a little Bakery, where the main product will be a REAL, SOURDOUGH BREAD. So, that’s our story...well, it isn’t a real history, but it is a very important part of our lives...Today, we’ve got more experienced, more skillful..rebuilt/upgraded our oven, right now, we’re setting up a new, more comfortable kitchen...But nothing has changed with our honest, hard work. The hands are still touching the alive dough, via which you’re getting our positive energies, in every single loaf of the bread...Real wood still heats the huge oven, which gives the bread its final golden color and a typical wooden smell...Your bread is still done from the high-quality Australian flour and other needed ingredients...There are still the 35 steps, 24 hours of a fermentation process, and a whole day of a kneading, mixing, rising, and baking before you finally get the golden gift - our REAL, HEALTHY, SEMIDARK BREAD!!
