Good coffee doesn’t rush.

After roasting, coffee needs time to rest.
This is when excess CO₂ slowly escapes, allowing flavors to settle and integrate.

Brew too soon, and the coffee can feel sharp, unstable, or unbalanced.
Give it time, and you’ll notice a calmer bloom, a more stable crema, and a cup that speaks with clarity, sweetness, and depth.

Because sometimes,
the best thing you can do for coffee
is simply to wait.

This is a quiet step with HARIO —
spending time with the new V60 Neo through a coffee that speaks softly, but clearly.

A limited Costa Rica Geisha, brewed slowly and deliberately,
letting clarity, balance, and texture unfold without being rushed.

Tomorrow, we’ll have a special guest behind the bar.
A familiar name to those who follow brewing closely —
the current champion of the Thailand Royal Coffee Brewer Cup.

No stage.
No announcements.
Just a chance to share a cup, exchange thoughts, and brew together.
