FV’s First Chef Residency
FV is excited to kick off our residency programme together with the talented chef Caro!
Q: Why vegan?
FV: Probably not because it’s fairly a part of healthy trend. What Caro creates is uncomplicated and simple at the same time beautifully delicious. We are fortunate that she is keen to explore!
C: I deeply value traditional food culture; it’s the foundation of how I approach cooking. At the same time, I believe we have to respond to the realities of our time and question modern industrial animal farming. What might seem restrictive at first has challenged me creatively, pushing me to rethink ingredients and build deeper flavor in unexpected ways.
Q: From the abundance of raw materials available and the long history of Thai cuisine and its food culture, isn’t vegan one of the most unpopular dietary amongst Thais?
FV: This could be an experience to diversify Thai traditional culinary, maybe a small future step forward…?
C: While veganism may not be widespread in Thailand, the abundance of local ingredients make it an incredibly exciting place to cook plant-based food. Walking through a Thai market, my eyes feast on the endless varieties of fruits, vegetables, and spices that immediately translate into culinary ideas. Bangkok, in particular, feels aligned with my approach: deeply rooted in tradition, yet forward thinking and contemporary. I believe that balance is why my food could resonate here.
Q: What to expect.
C: I love playing with flavors and textures to create food that surprises. With Thailand’s vibrant bounty of ingredients, it’s a joy to bring local produce to life in dishes defined not by what’s absent, but by what’s possible.
