🍋การทำแยมที่ดีไม่ใช่แค่ทำตามสูตร 🍯

เวลาเชฟฝรั่งเศสทำแยม
หลายคนไม่ได้ดูแค่ตัวเลขอุณหภูมิ
แต่ใช้การ “อ่าน texture” ของแยมจากสายตาและสัมผัส ✨

หนึ่งในเทคนิคคลาสสิกเรียกว่า
“À la goutte” — การเช็คจากลักษณะหยดของแยม

เมื่อยกช้อนขึ้นแล้วปล่อยให้แยมไหลกลับลงหม้อ
เชฟจะสังเกตว่า…

• แยมไหลเร็วเกินไปไหม
• หยดเริ่มหนักและช้าลงหรือยัง
• หยดสุดท้ายเริ่ม “แขวนตัว” ที่ปลายช้อนหรือเปล่า

ช่วงเวลาสั้น ๆ นี้คือจุดที่เพคติน น้ำตาล และผลไม้
เริ่มสร้าง texture ที่สมบูรณ์ 🍊

เพราะผลไม้แต่ละชนิดไม่เหมือนกัน
การทำแยมจึงไม่ใช่แค่ทำตามสูตร
แต่คือการเรียนรู้ที่จะ “อ่านธรรมชาติของผลไม้”
