Mom’s Carrot Cake

It’s been on the menu unofficially since we opened three years ago, made only on request and always by Mister Chou’s mom. We knew we had something special before us when some of our very first customers kept asking about it even with a display full of other tempting pastries. Sometimes, one wants what feels grounded and familiar, and for many that means carrot cake.

Exceptionally moist and flavourful, Mom’s Carrot Cake is a clear standout, reflecting the character and personality of the person who made it — warm, generous and wholesome.

Like piecing a new section of a family tapestry, we wanted to continue her story with our own voice, careful not to change the narrative or forget where it all began. We replace standard table sugar with coconut and muscovado sugar. The deeper, darker flavour of unrefined sugar provides balance and depth, allowing the natural sweetness of carrots, apples and pineapples to come through. We grate some fresh lemon zest directly onto the cake layers, bringing out the tanginess of cream cheese, making it more refreshing. For texture and contrast, we insert a thin layer of cookie crumble. The five different spices comprising the crumble layer bring more warmth and earthiness to the cake.

Like an ongoing story with a clear and distinctive premise, the story of Mom’s Carrot Cake continues, guided by a new voice and with new characters.

Russian Honey Chou — unfolding flavours like the layers in a matriochka.

The beautiful thing about choux pastry is its apparent simplicity. It is the quintessential pastry for fat kids at heart longing for that sensuous satisfaction of biting into a choux bun so well garnished it almost seems to burst out. In only a few bites, there is only so much room for cream filling, only so much room for persuasion, before the flavours start to muddle and become incoherent. This is why single, plain flavours are often preferred to more layered combinations.

Russian Honey Chou is about layering flavours. The top note of floral lychee finds an unusual companion in cold-pressed hazelnut oil. Unlike hazelnut butter or praline, an emulsion prepared with cold-pressed hazelnut oil is not excessively rich or overpowering. Its deep, rounded flavour lands cleanly rather than aggressively. The middle note, roasted soy bean powder, like a touch of seasoning, adding nuance to the spectrum, brings the trio together in this playful and expressive rendition of the classic Russian Honey cake.

Lychee honey whipped cream brings aromatic lift. Cold-pressed hazelnut oil emulsion brings depth of flavour. A clean whiff of roasted hazelnuts, not murky or aggressive. Roasted soy bean powder, the middle note, like a touch of seasoning – a place in the shade from the top, floral note of lychee honey, while remaining peripheral to the deeper base note of roasted hazelnuts.

After three years, our Miso Caramel Flan finally gets a facelift.

The cross-lamination pattern will now run vertically instead of horizontally, producing a cleaner and more effortless cut along the same axis as the knife’s blade.

It is important to remind ourselves that even signature creations can always be better and benefit from a keen awareness of detail. Even the smallest ones can be the difference between a decent and a memorable pastry experience. All it takes is to keep listening to what our customers have to say.
