Sourdough Focaccia

Ingredients (gram)
Water 450
Bread flour 300
AP flour 300
Levain 120
Salt 15
Olive oil 15

Method
1. Mix water & Levain in mixing bowl
2. Add remaining ingredients
3. Mix with dough hook on low speed ≈ 5 mins
4. Transfer to bulking container ~ rest 45 mins
5. Coil fold ~ rest 2 hours
6. Coil fold ~ rest 2 hours
7. Coil fold ~ re**rd overnight in the fridge
8. Brush olive oil on the baking pan
9. Life and Move dough into the baking pan ~ rest 2 hours
10. Stretch dough to fill up 4 corners ~ rest 2 hours
11. Pre-heat oven @230°c
12. Dimple the dough and add toppings of your choice
13. Bake at 230°c for 30 mins

Okay, this is what Im up to nowadays.
Few months ago I was planing to expand my “Sourdough Production” as many of you saw from my post.
However, covid gave me another sharp turn. One of the business that my husband is invested in needed help, he needed help, so I was helping him with a little but of office stuff and some of the production stuff.

It was unexpected but I must say that it is my pressure to be able to create some new menu items for

Bread Flour 150g.
Purple Potato powder 5g.
Salt 3g.
Water 114g.

Pumpkin :

Bread Flour 150g.
Pumpkin powder 5g.
Salt 3g.
Water 114g.

- Add Levain 30g. each then rest for 30 mins
- Bench Stretch& Fold, rest for 1 hour
- Coil Fold, rest 1 hour
- Coil Fold, rest 1 hour

My new favorite……
Black Olives & Sun-dried Tomato & Rosemary Sourdough
then toasted with garlic butter…….hmmmmm yummy!!

Garlic butter :
Unsalted butter 100g.
Garlic 3 tbsp (chop)
Parsley 1 tsp (chop)
Salt and pepper for seasoning

Direction :

1. In a saucepan, place butter and garlic and simmer over low heat for 7-10 minutes.
2. Remove from the heat and add the rest of the ingredients
3. Place garlic butter into a small bowl and put in the fridge until butter is creamy (keep mixing time to time to keep the garlic well-blended throughout the mixture.
4. Spread on your sourdough then toast them in an oven at 180°c for 15-20 (depend on how crispy you would like them to be)

Par-baked or partially baked bread is a process of cooking the bread through without finishing it, removing it from the oven for a time to cool down, then keep them in the fridge or freezer, and completing the baking at a later time. This way you can have a freshly baked loaf of bread at home and at anytime you need.

This par-baked can be stored in the fridge for about a week in an air tight bag. To heat up is very simple, put the bread in an oven and heat up at 230°c for about 20 minutes or until the crust is nicely brown (no need to pre-heat the oven).

And this can be stored in the freezer for months. To heat up is basically the same but you just need to thaw the bread by remove it from the freezer and put in the fridge overnight (or about 12 hours) then follow the above method.

For those who takes bread seriously, this is your solution!
