We'll lets face it, not all appreciates scones ...
They usually find them too dry or perhaps it's the texture?
It's kinda like.... American biscuits vs a soft roll or German farmer's bread vs Japanese soft roll...
Hence it came to me to make it into a quick bread with the same 'theme' -Lemon and Lavender.
Since there are a lot more butter used in scones to attain its flakiness and buttery goodness, lemon curd works really well with the scone as the tang of the lemon cuts the butter.
Here with this bread, a lemon curd might works well for those who really really loves the tang & zing, however it is best paired with homemade strawberry jam. Reason? The bread is pre drowned with fresh lemon juice once baked, hence it might really be too sour for many if lemon curd is used. On the contrary, huge chunks of strawberry, the fragrant of strawberries complimenting the lavender and not overpowering the lemon makes the best pairing to this quick bread.
Oh and did I forget to mention that it is SO tasty one would never believe how 'healthy' the ingredients are in this LEMON & LAVENDER QUICK BREAD.
Btw for those who don't mind the calories, go ahead and spread the bread with clotted cream. It gives a creaminess to the tangy n super fragrant bread as well as mellowing down the lavender ( for those who cannot accept lavender as food and only as aromatherapy). However I do not recommend to use both clotted cream and strawberry jam as that would really take away the nice soft lavender fragrant. After all it is Lemon Lavender Quick Bread, not strawberry n clotted cream bread with lemon.
