The best collaborations do not need much explaining. BTB knew exactly what they wanted and we knew exactly how to deliver it. Same language, same standards, same obsession with getting it right.

Beyond The Boardroom is a new venture by the publishers behind Vogue Singapore : a platform dedicated to decoding the exchange between business and culture.

When they came to us for their inaugural evening, their public coming out, we wanted to make sure the cookies matched the moment.
The brief was clear. Real cookies. Not the tiny bite-sized kind. A proper, generous cookie you actually want to eat. That is exactly what we do.
We went with two flavours, chocolate chunk and brownie crinkle, keeping them nut free. But the real work was in the details.

BTB wanted their logo and their exact brand colours on every single cookie. We took that as a challenge. We built a prototype of the logo, had a custom cookie cutter made, and matched the fondant to their exact Pantone shades.
The logo was so intricate that every single one had to be hand-cut, even with the cutter. Precise, painstaking, and completely worth it.

The result? Perfect. And our clients thought so too.

Easter weekend, a birthday, and full creative freedom. That’s a combination I will never say no to.

I built this one around a white chocolate infused cake, which gives it the most beautiful crumb. The filling is a hazelnut chocolate cremeux, almost mousse-like, layered with toasted hazelnuts, a salted caramel drizzle and Valrhona crunchy pearls. Texture in every single bite.

Finished with a dark chocolate buttercream ganache, then came Easter dress up. A medley of Easter eggs, edible bunnies, carrots and daisies,nestled in a bed of edible grass.

This is the kind of cake that makes the whole process so joyful. When the brief is simply “go for it”, magic happens.

Brown Butter Corn Cakes

A financier-style cake made with sunny yellow cornmeal and brown butter. Crispy on the outside, gooey and chewy within, with a nutty warmth and the perfect hit of salt.
I’d best describe them as somewhere between a blondie, a cookie and a financier. So utterly addictive, we sell them in a jar of 3.

Here’s a little backstory on these nuggets of goodness.
All our travels revolve around food, the best way to immerse ourselves in the culture and flavours of the places we visit.
This trip to NYC was no different. I’ve lost count of how many times I’ve visited the city, and every single time there’s something new to discover. A neighbourhood I haven’t walked, a restaurant I haven’t tried, a bakery I didn’t know existed.
Radio Bakery in Brooklyn was on every single list. Both outlets, long lines at each. Absolutely worth it.

I asked for something gluten-free, and what landed in front of me was something I had no idea existed. Brown butter corn cakes. Coarse yellow cornmeal, plenty of brown butter, crispy outside and gooey chewy within. Sweet, salty, nutty and tender all at once. I was completely blown away. I went back and bought six more.

I came home determined to recreate them. It took a while to get right, and when I did, they went straight onto the spring/summer menu. They disappear so quickly at home. I make them almost every week, sometimes twice.

A 50th birthday deserves something worth remembering. It was an honour to be part of it.

The Virgin Berry Cake was chosen for the occasion. An addition to our Spring Summer Collection- it’s light and fruity, and just right for a celebration with the closest friends and family.

The cake is made with egg yolks and white chocolate, giving it a gorgeous golden colour. The white chocolate also gives the crumb that melt-in-the-mouth texture.

Each layer is filled with a homemade mixed berry compote, kept slightly tart to balance the frosting.
I wanted the frosting to feel very light, so I used a blend of white chocolate cremeux and mascarpone, very mildly sweetened so every other flavour can shine.

This beauty was made for a very special birthday girl, and what better theme than the one and only Gossip Girl!!

A white vanilla cake with white chocolate folded right into the batter, giving it that melt-in-your-mouth texture.

The inside: Layers of silky Swiss meringue buttercream swirled with a homemade berry compote, because this birthday girl loves her berries and her cake light and fruity.

That colour gradient: From a bold hot pink, melting into the softest blush, all the way to a creamy ivory.
Honestly, watching it come together was one of my favourite moments.

Happy Birthday, sweet one. You know you love it. 💋

Gingerbread Cookies – Naughty Nice Edition!

These playful cookies were created for a very chic client who wanted something extra fun for her birthday celebration.

After an elaborate dinner, a few bottles of wine and champagne, and a chocolate pistachio birthday cake (photos coming soon!), we surprised the guests with a special cookie-decorating station.

I laid out a fully decorated sample set to show how the exact same cookie shape could be styled in two completely different ways, and from there the creativity took off.

With happy bellies, spirits high, and lots of laughter, everyone dove in and crafted the most imaginative, hilarious, and absolutely adorable cookies.

We’re diving into the cheeky side of Christmas this year- say hello to our naughty and nice gingerbread cookies!

These bad boys (or good boys 😈) were made for a client who wanted a fun, unforgettable contribution to a Christmas party he was attending.

If you have a naughty or nice idea in mind, reach out and let’s make it happen.

I believe that while something can look fun and festive, it has to taste even better- and these cookies are exactly that.
Made with rich molasses and a warm blend of spices, these crisp beauties deliver deep flavour and a gorgeous dark brown colour.
