A same day baking sourdough.
Toasted Barley n Seeds sourdough
Bread flour -770g
Toasted barley - 30g
Semola - 200g
Liquid Starter - 400g
Discard PM - 100g
Water - 830g
Salt - 22g
Seeds - 170g
(Soak in water - 50g)
1.5 hours with 2 folds - 350g dough
Final proof for 2.5 hours at 27C
Bake 240C for 20 minutes w steam
