Wow, I haven't posted for more than a year. Ever since my iPhone became too old and had problems uploading onto Facebook. To now using a cheap phone and the photo quality is not so good.

But just thought of posting what I baked around 2 weeks ago. Plain piped butter cookies for the nieces and some light fruit butter cake.

Love the mini containers which were actually specially kept for me by my friend to reuse.

When ieatishootipost shared his banana cake recipe, I just knew that I has to try it. Been a fan of his fail proof japanese cheesecake and I know that this recipe wont disappoint.

Love the banana favour due to the amount of banana used even though i did not add any banana essence. I like that he weighs the bananas as they can come in varying sizes. The reverse creaming method is very unusual and surprisingly gives a very light and tender texture in the butter cake. The whole family loves it.

He has a video on how to make the cake as well: http://ieatishootipost.sg/best-banana-cake-recipe/

Also changed the brand of alkaline water to Bake King brand and the colour is much more browner and even compared to Phoon Huat brand.

Racines Cake by David Lebovitz

I first came across this recipe in David Lebovitz's cookbook - Ready for Dessert. Craving something chocolatey, but didn't want to bake brownies (cos no one else in the family wanted to eat) this recipe intrigued me. Ingredients are so simple, but there is no flour in this cake, so I was keen to find out how it would taste.

The texture is amazing, creamy and smooth while eaten at room temperature. Its best eaten the day it is baked. While you could keep it in the fridge, it is harder when eaten cold. And its best to warm it up (microwave/ toaster) before eating.

The cocoa nibs at the top really elevates the flavour, giving it that hint of bitterness that goes well with the rich cake as well as crunch. It also makes it look classy.

The recipe in the link makes one 9 inch cake. But I made two 6 inch cakes instead. Cos I prefer smaller cakes and this cake is best eaten in small portions. And its always good to have an extra to give away.
