We are an artisan styled bakery specialising in breads, pastries and cakes. Our breads are made from a natural fermentation technique employing the use of levain. There is no yeast used in all our rustic breads. Breads made from natural sourdough starter have a distinctive aroma and subtle sour tinge at the end of the palate. It is healthier and easier on your body. Our pastries (viennoiseries) a

re hand rolled daily. We use only French sheet butter which has a higher butter content. This bring a certain flakiness and texture to our viennoiseries. All pastries are baked fresh daily and are ready by 8am in the mornings. Cakes & tarts are part of our new range of products. We bake our cakes from scratch without the use of emulsifiers or stabilisers. We also do not use artificial food colourings in all our cakes. All colourings used in our bakery are derived from fruits and/or plants. Our bakers are passionate about baking and are delighted that they play a part in bringing healthy and safe foods to all our customers. Drop in today for a loaf or two!

Pain au Levain - Sourdough bread (literal translation)

What is sourdough bread?
- a sourdough is a naturally leaven bread that has an airy texture and a distinct tangy flavour.

What makes a good sourdough?
-unlike other leaven breads that use baker’s yeast as the leavening agent, a traditional sourdough is naturally leaven using its own starter (a starter that ferments over time, producing natural yeast and the distinct acidic flavour). Sourdough bread should also have a crusty exterior and an airy open crumb.

What is an open crumb?
- an open crumb (crumb is a cross section of the bread) is a certain lightness, a peculiar airiness that lends a good sourdough it’s texture. A good quality open crumb is noted for its relatively large cellular structure..

What is a good quality open crumb?
- the quality of open crumb will show the baker’s skills and experience. The crumb (see picture) should be marked by irregular sized holes. The holes can vary from small to medium to large (all in 1 loaf). These holes are from fermentation and not by some dough MISHANDLING or OVERFERMENTATION or UNDERFERMENTATION. These are called "stupid" crumbs 🤣

Most commercial sourdoughs have tight open crumbs because they use stabilisers or preservatives. These 'chemicals' may kill off any natural yeasts. Some commercial bakeries add other acidic ingredients (natural or unnatural) to bring back the tangy flavour.

While anyone can make breads, not everyone can bake a quality sourdough. A sourdough shows the baker’s skills and passion for his trade.

A handmade product will always be special and will always be different from a factory made product. Of course there will be a price difference between a commercially made product versus an authentic handmade, naturally leaven loaf.

Buongiorno! Foccacia is one of the most famous Italian flatbreads. We make ours Genovese style - light, soft and fluffy, topped to a generous sprinkling of herbs and olive oil.

Use it for your favourite sandwich filling or sever with a piping hot bowl of soup or mop up the sauce from chilli crabs, it is even good eaten on its own.
