Sharing my learning process here for fellow sourdough enthusiasts. ☺️

I initially thought the tough texture of this particular recipe was due to lack of oven spring, due to the heavy load of ingredients and crust hardening too fast before expansion. And i went on spraying more water to try to increase steam production. I refused to look at my hydration becos Ihave previously went thru rounds of rnd for it from the start and higher hydration experiments have failed me most of the time.

Over drenching the loaf was a terrible rookie mistake to make. The loaf simply got harder and worse, it ended up over baked on the outside (very hard crust), and the center took way longer to cook, and became dense inside. After receiving several feedbacks, I went on another merry-go-round chase for the dream loaf again.

After tweaking the hydration, changing the way I mist the loaves, a steel baking plate and DIYed a foil cover during baking, I am so so glad. My beautiful fruitnut loaf is back and better!
