Sunday Bake - Sun-dried Tomato 🍅 with Fresh Herbs. Part of my Umami Sourdough Bread series. This one’s a flavour bomb inspired by my kid’s love for this loaf. A little spicy, flavourful and plenty of colour to make it all the more appealing.

🤎 Rye so in love 🤎 been inhaling this loaf Singaporean style with Kaya spread and a slab of butter. Shiok!

68% rye preferment made overnight with cake flour for softness and fine crumb. Pizza flour for a touch of extensibility. More rye flour for nuttiness. Left to proof for just a couple of hours. Baked till charred for caramelised sweetness on the crust. Hello perfection. Only thing I would change… just 0.2% more salt. 🧂 and a touch more toast to the flour. nomnomnom

blitzed up my overfed, slow and lazy pasta madre with water and made a random Tomato 🍅 sourdough. Will make a better version next time round with a more active starter. 😜

70% hydration
8% tomato oil
8% tomato paste
20% PM
2% salt

Add inclusions like 🌿 herbs, sundries tomato and olives to taste. Have fun!
