Low Carb Pao Fan
Prawns were really large and on sale when I went to NTUC yesterday. Couldn't resist buying a few and 2 packets of Asari frozen clams (also on sale). Originally contemplated getting the fresh clams in the chiller section, but they looked kinda dry and dead.
The soup is super easy to cook, can be done in 10-15mins.
Fry some julienned ginger in a little oil til fragrant, add some minced garlic, sesame oil and a good drizzle of shaoxing wine. Add some water and bring to a boil. Then add in prawns and the packet of frozen clams (liquid and all). Bring to a boil again and turn off the heat when prawns are cooked. Garnish with coriander and more shaoxing wine if desired. Season to taste with salt/fish sauce/pepper, etc.
I already had cauliflower rice in the fridge so just poured hot soup over to make my pao fan.
Cauloflower rice made in the TM6. The recipe says steam in varoma, but i just used varoma setting n cooked it in the pot itself for a couple of mins. 🤭
