Very fat n cute loaf today... I actually underproofed it last night coz I started late and couldn't wait past 12+am as I had a class this morn. Threw it into the fridge and took it out this morn to proof at room temp abit more b4 cold proofing in the fridge till I came home after class.

Sourdough is pretty forgiving when you get used to it...just keep baking...

Low Carb Pao Fan

Prawns were really large and on sale when I went to NTUC yesterday. Couldn't resist buying a few and 2 packets of Asari frozen clams (also on sale). Originally contemplated getting the fresh clams in the chiller section, but they looked kinda dry and dead.

The soup is super easy to cook, can be done in 10-15mins.

Fry some julienned ginger in a little oil til fragrant, add some minced garlic, sesame oil and a good drizzle of shaoxing wine. Add some water and bring to a boil. Then add in prawns and the packet of frozen clams (liquid and all). Bring to a boil again and turn off the heat when prawns are cooked. Garnish with coriander and more shaoxing wine if desired. Season to taste with salt/fish sauce/pepper, etc.

I already had cauliflower rice in the fridge so just poured hot soup over to make my pao fan.

Cauloflower rice made in the TM6. The recipe says steam in varoma, but i just used varoma setting n cooked it in the pot itself for a couple of mins. 🤭

Sourdough butterscotch pecan cookies

Its that time of the year again when the kids bug me to make gifts for their teachers.

Had no time today...so found a recipe on cookidoo and got my girls to mix the cookie dough using the Thermomix. My eldest one did all the baking and most of the packing. 👏 The advantage of having older kids. 😜 I can now just supervise (scold) from a distance.

Packaging this year is somewhat subpar because we couldn't find those metal twist ties at home....realised it too late to buy. 😅

Had one portion of noodle dough left from last night's sourdough ban mian class. Turned it into today's lunch.

To my participants: you will be pleased to know that the dough rolled out fine. Just a tad more sticky, flour it slightly when rolling. Texture wise it cooked up fine, just slightly softer.

Did a little bakesale at Dunman High School today selling sourdough waffles and other bakes... thanks to the overwhelming support we sold out in abt 2hrs. Didn't even have time to take proper pictures of my booth. 😅

Only doing small boxes this year because the taller containers are harder to fill plus the bottom layers crack more easily due to the weight. Limited quantity because I may not have the time/energy to do more. 😄
