MASHED POTATO FRITTERS 😋
Ingredients:
2 boiled potatoes
Parsley
Salt
Pepper
Peppers
15g cornstarch
120g breadcrumbs
15g Parmesan cheese
1 egg
oil for frying
Preparation:
1. Mash the boiled potatoes until they are still warm with a fork. Add the parsley, salt, pepper, paprika, cornstarch and mix everything well until the dough is created. Make balls of the potato mixture.
2. Mix the breadcrumbs with the Parmesan cheese and parsley to make the breadcrumb mixture.
3. Dip each potato ball into the beaten egg and then into the previously prepared breadcrumb mixture.
4. Take each ball and press into the spoon with your hands to fry until the shape is created. Flip the frying spoon over and hit with your hands so that the potato fritter comes out.
5. Fry in hot oil on both sides until golden.

INGREDIENTS :

Lemon Loaf

▢ 1 1/2 cups all-purpose flour
▢ 1 teaspoon baking powder
▢ 1/4 teaspoon baking soda
▢ 1/4 teaspoon salt
▢ 1/4 cup unsalted butter melted and at room temperature
▢ 1/4 cup vegetable oil
▢ 1 cup granulated sugar
▢ 3 large eggs
▢ 1 teaspoon vanilla extract
▢ 1 teaspoon lemon extract* or add additional ½ tablespoon of lemon zest
▢ 1 tablespoon lemon zest
▢ 2 tablespoons lemon juice
▢ 1/2 cup sour cream or buttermilk

Lemon Icing
▢ 1 cup powdered sugar add more until desired consistency is reached
▢ 1 tablespoon lemon juice
▢ 1-2 tablespoons cream or milk adjust as needed for consistency

INSTRUCTIONS :

Lemon Loaf

🔸 Preheat the oven to 350F degrees. Grease and flour an 9x5-inch loaf pan, or line with parchment paper.
🔸 In a medium size bowl, combine the flour, baking powder, baking soda, and salt. Whisk together. Set aside.
🔸 In a large mixing bowl, with a electric mixer on medium speed, mix the granulated sugar and the eggs for 2 minutes. The extra time helps to incorporate air into the batter which makes the bread more fluffy.
🔸 Add the melted butter and the oil. Mix to incorporate.
🔸 Add the vanilla, lemon extract, lemon zest and lemon juice. Mix on medium speed until all ingredients are combined.
🔸 Add in the sour cream and mix well.
🔸 Add the dry ingredients to the wet, approximately ⅓ of the mixture. Mix until almost incorporated and add more. Continue until all the flour is incorporated in the wet mixture. Don’t over mix. Sometimes I will use my hand mixture but finish with a spatula when I only have a little bit of dry flour left.
🔸 Pour the mixture into the prepared loaf pan.
🔸 Pour the batter into the prepared pan and bake for 50 minutes or until an inserted toothpick comes out clean and the top feels firm to the touch. If after about 30-40 minutes the top is browning too much, tent a piece of aluminum foil over top and continue baking.
🔸 Cool completely. Once the loaf is cool, prepare your glaze by mixing all ingredients together

Lemon Icing :

🔸 In a medium bowl whisk together the powdered sugar, lemon juice, and cream/milk until smooth. Add in more powdered sugar or cream as needed for desired consistency.
🔸 Remove the cooled loaf from the pan and drizzle or pour over top.

BROWNIE BUTTER CAKE RECIPE

🌟 INGREDIENTS

FOR THE BROWNIE

◾️1 cup dark chocolate chips
◾️¼ cup butter
1/4 sugar
1 whole egg
1/4 cup All purpose flour
1/2 teaspoon Instant coffee powder

For butter cake
1 cup All purpose flour
1/4 teaspoon baking powder
1 cup sugar
3/4 cup butter
2 Whole Eggs
3 tablespoon Milk
1 teaspoon vanilla extract

Directions :

To begin with, Brownie Butter cake, preheat the oven at 180-degree Celsius.
Grease or line an 8″ inch loaf pan with parchment paper.
Melt chocolate, butter and coffee granules in a microwave. Once it is melted, add sugar in the melted chocolate and stir well and keep it aside to cool.
Add egg and vanilla extract and whisk again. Add sifted flour and fold in gently to make a batter.
Pour in the batter in the prepared pan and bake for 15 mins only. While the brownie.

The next step is to make the butter cake. Take butter and sugar in a bowl and beat until light and creamy.
Add the eggs and vanilla extract and beat it very nicely till it becomes creamy and frothy.
Sift flour and baking powder together and add into the egg mix. Fold in gently and slowly add milk to make a smooth and silky batter.
After 15 mins the brownie must be half done, remove the pan from the oven and pour in the cake batter over the brownie.
Gently to settle the air bubbles and put the pan inside the oven.
Reduce the oven temperature to 160 degrees C and bake for another 25-30 mins or till the toothpick inserted comes out clean.

Take out the pan and let it rest on a wire rack for 10-15 mins. Carefully hold the parchment paper and lift the cake from the pan and keep it on a tray and allow it to cool completely.
Serve Brownie Butter cake and enjoy

Condensed Milk Dinner Rolls

INGREDIENTS:
For the dough:
3 ¼ cups all purpose flour
1 tablespoon instant yeast
½ teaspoon salt
1 cup milk, room temperature
½ cup condensed milk
1 large egg
2 oz unsalted butter, cut into cubes, room temperature

MANGO CHEESECAKE 😋
Ingredients
For the crust:
1 1/2 cups crushed vanilla cookies
6 tablespoons melt-in-the-mouth unsalted butter
For filling:
3 pkgs (8 oz each) cream cheese, softened
1 cup of sugar
1/4 cup all-purpose flour
4 large eggs
1/2 cup mango puree
1 teaspoon vanilla extract
Pinch of salt
For the cover:
1 cup mango puree
1/4 cup sugar
1 spoon of lemon juice
1/2 teaspoon of tasteless jelly
Preparation
1. Prepare the crust: preheat the oven to 350°F (175°C). In a medium bowl, mix the crushed cookies and melted butter until well combined. Press cookie mixture into base of 9-inch cheesecake pan. Bake for 10 minutes and let cool.
2. Prepare the stuffing: In a large bowl, beat the cream cheese with an electric mixer until soft. Add the sugar, all-purpose flour, eggs, mango purée, vanilla extract and salt. Mix well until the mixture is smooth and homogeneous.
3. Pour cream cheese mixture over cookie crust and spread evenly. Bake 50-60 minutes, or until center is firm.
4. Prepare the couverture: in a medium bowl, combine the mango puree, sugar and lemon juice. Sprinkle tasteless jelly over the mixture and let sit for 5 minutes. Then heat the mixture in the microwave for 20-30 seconds or until the jelly is completely dissolved.
5. Remove the cheesecake from the oven and let cool at room temperature for 15 minutes. Then, pour the couverture mixture over the cheesecake and spread evenly. Refrigerator for at least 4 hours, or until thoroughly cold and firm.
6. Cut the mango cheesecake into portions and serve cold.
