Dapiku sweets & no we weren't trained in Shatec or Sunrice or Le Cordon Bleu.

& no we don't do cupcakes or anything with fondant. but we love cats if that helps.

Totally irrelevant,
however totally necessary. Wont we get to know each other,
a little better now. For now, its Dapiku time. All them sweets & much more.

A little late to the trend… we were busy getting raya-ready.

But we’re back and we hope you’ve been enjoying this little series with us. Because as someone wise once said… give a person a fish, they eat for a day. Teach them to fish…they’ll still end up at Seng Siong buying fish (gelatine).

Anyway.

Dubai chewy cookie time! but with our own calamansi marshmallow.

It’s actually way easier than it sounds & once you get it, you can flavor it however you like. Ours is bright, citrusy & a little nostalgic fun.

Cook sugar, glucose, calamansi juice & salt to 121°C, pour into bloomed gelatin (gelatin + cold calamansi juice), then whisk till cool and fluffy. Spread, chill for marshmallow magic.

We stole a little for these cookies (priorities), and saved the rest for a custom order.

Melt the marshmallow gently, fold in cocoa + milk powder, cool slightly… then wrap it around pistachio kunefe balls. Finish with a roll in cocoa powder.

The pistachio kunefe balls? Just toasted kunefe, pistachio paste + tahini.
(…and okay, a tiny bit of smoked salt for ourselves)

Soft, chewy & slightly messy, just like somebody we used to know.

We’re making kueh batik for our friends and family this Raya, made extra special with .professional cream cheese , Japan’s #1 cream cheese that’s also halal-certified and perfect for this festive treat!

Kiri Cream Cheese Kek Batik

Makes a 7" square mold

Chocolate biscuit layer
240g marie biscuits
170g unsalted butter
100g milo
15g cocoa powder
2g salt (a pinch of salt)
180g condensed milk
100g egg
10g vanilla extract
110g milk

Kiri cheesecake layer
460g Kiri cream cheese, softened
90g icing sugar
10g lemon juice
160g cream

Dark chocolate cream
120g dark chocolate 70%
120g cream

Chocolate biscuit layer
Melt the butter, when bubbling add in cocoa powder, milo powder, salt and condensed milk.

Whisk till smooth, then add in the egg, vanilla extract and milk.

Continue heating till thickened, using low–medium heat.

Remove from heat & add in biscuits, mixing well.

Press into the pan and place in the chiller.

Kiri Cheesecake layer
In a mixer, paddle Kiri cream cheese with icing sugar and lemon juice.

Once combined, stream in the cream and mix for 3–4 mins. Spread over the biscuit layer.

Place back in the chiller.

Dark chocolate cream
Heat the cream & pour over the chocolate.

Mix till smooth, allow to cool slightly & spread on top.

Final steps
Place kek batik back into the chiller for at least 6 hours (overnight is best to allow the biscuits to soften).
Once well chilled, remove from the mold & enjoy

On our first tiny kitchen session we’re making the queso (cheese) flan. The flan that broke the internet. We were equally confused and curious, so obviously we had to try it.

Honestly… half the joy of desserts is making them. The other half is eating them straight from the fridge at 1am.

135g cream cheese
260g cream
95g sugar
210g egg

If you’ve been to our home, you know that Misteri Jam Dua Belas is always playing in the background. It was only a matter of time before we stopped listening and started… acting?
