My son wanted me to make an ice cream cake.

Vanilla ice cream base
Chocolate fudge and crushed Oreos in the middle
Caramel ice cream on top.

Frosted with whipped cream.

My daughter wanted a Ninjago cake for her birthday, but I had to practice first.

Today also happens to be my husband’s birthday and when I asked him what sort of cake he wanted for his birthday he said he didn’t mind.

So he gets a practice Ninjago cake 😎

How many men in their 30s get a Ninjago birthday cake eh?! 🎂

Made Filipino rice cakes (palitaw) from the 108 Asian Cookies cookbook subtle asian baking

I made them with my kids and got them to choose some colours to dye the palitaw with 🤓

Excited to share my Filipino culture with my kiddos 🇵🇭

Made some black sesame and white chocolate chunk cookies from the cookbook 108 Asian Cookies.

It reminded me of the sesame balls I used to have at Yumcha when I was a kid 🤓

After the first bite my kids weren’t too sure, then they were back for more and were happy chappies 😍

Our bananas at home just kept on getting more and more ripe but we just weren’t in the mood to eat them.

So I ended up making banana chocolate chip muffins instead! 🤓

My friend made a delicious dinner and I brought over the dessert. It’s been a few weeks since I’ve baked something so I was keen to get the oven started again 🤓

She and her husband aren’t too keen on too-sweet dessert, so I opted for a light cake with whipped cream and berries.

She said it’s the best cake she’s
Had since she came to Sweden 😍

I started setting out the ingredients to make carrot cake then my 4 year old son wanted to join.

This cake recipe was my favourite cake for almost 15 years.

According to my kids the cake was:
“disgusting”
“Ok but I ate it anyway”.

According to my friends and others I’ve baked it for over the years, it’s amazing. 😅

If you’re curious, check out the recipe below:

Recipe:
1. Preheat oven to 180C
2. Add 2 cups of flour, 2 teaspoons baking powder, 1 teaspoon baking soda, 3/4 teaspoon salt, half teaspoon nutmeg and 2 teaspoons cinnamon to a bowl. Whisk
3. In another bowl, add 1.5 cups brown sugar, 3 eggs, 3/4 cup neutral oil, 1 teaspoon vanilla sugar/extract.
4. Whisk.
5. Add wet mixture to dry mixture.
6. Mix.
7. Add 2 cups of grated carrot and 1 cup of drained crushed pineapple.
8. Mix.
9. Put into 2 greased 9 inch/ 23,cm round pans
10. Bake at 180C for about 25-30min (until fork comes out clean)
11. Cool the cakes
12. For icing: mix 250g cream cheese, 110g unsalted butter, 1 teaspoon vanilla sugar/extract and 1.5 cups icing sugar until smooth
