Jag tycker om att utforska nya smaker och kryddor, att tänka utanför lådan och testa olika tekniker och smakkombinationer, samtidigt som jag tycker att det är viktigt att respektera hantverket och ingrediensernas integritet.

Made this cake for a tigers fan the other day. It's a Swedish chocolate cake filled with milk chocolate mousse, matltesers and chocolate covered pop rocks. It's decorated with fondant and the logo is hand painted by my brilliant friend Amanda.

Today I made "semlor". It's a traditional Swedish pastry/bun eaten for fat Tuesday. It's a brioche type bun with cardamom, filled with homemade almond paste or creme patissier (or a combination of the two), topped with whipped cream and icing sugar. All made from scratch of course. Some people eat it in a bowl of warm milk, and then it's called "hetvägg" meaning "hot wall". I prefer mine as it is with a combination of both fillings.
